Chilli Garlic Okra: Chinese Style

Intro: Chilli Garlic Okra is a chinese recipe which you can make as main dish with noodles or steamed rice. Deep fried okra or ladysfingers served Chinese style.

Ingredients:3-4 green chillies
2 tbsp red chilly flakes
6-8 garlic cloves, peeled & chopped
500gm okra(lady fingers)
4tbsp cornflour
2 tbsp oil for deep frying
1 med onion, peeled & sliced
1 med green capsicum, seeded & cut into strips
1tbsp soy sauce
1/2 teaspoon white pepper powder
salt to taste

MethodWash, pat dry and trim the ladies' fingers. Sprinkle two tablespoons of cornflour on ladies fingers and mix well. Mix the remaining cornflour with one cup of water. Heat sufficient oil in a wok and deep fry the ladies fingers until golden brown and crisp. Drain on absorbent paper.

Heat 2tbsp of oil in a wok; add the chopped garlic and stir fry for a few seconds. Add the sliced onion, green chillies and capsicum and saute for two to three minutes or until the onion turns translucent.

Add the soy sauce, white pepper, salt & cornflour mixture. Cook, stirring continuously, for a couple of minutes, or until the sauce thickens. Add the fried ladies fingers and toss well to mix. Sprinkle the red chilli flakes and serve hot.

You can serve this with steamed rice or hakka noodles.

If you want to do something a bit different. My recipe is so simple, that it does not need measurement. Simply deep fry some okra (get rid of the stem) and in a separate pan, fry some chopped garlic and chili. When the garlic is golden and crunchy, mix and cover the okra with the garlic and chili. Dish up in your serving plate and top with freshly chopped coriander and fruity, citrusy pomegranate molasses. This is a great mezze dish, so eat it with your fingers. No forks and knives, please…
